    This egg free breakfast of Bacon Hash is delicious and healthy! It's a balanced meal that's filling too!

    Bacon Hash

    If you'd like to switch up the protein, try this Hot Dog Hash! It's a great way to use up hot dogs and is another egg-free breakfast!

    Ingredients Needed

    • Bacon
    • Potatoes
    • Onion
    • Garlic
    • Red Pepper
    • Butter or Olive Oil
    • Salt and Pepper

    Substitutions

    • You can keep this dairy free by using olive oil and no butter.
    • Try different colored bell peppers, or even jalapenos!

    How to Make

    Start by frying the bacon in the pan, a few minutes on each side until the desired crispiness is reached. Set aside on a paper towel lined plate.

    Cooking the bacon in a cast iron pan

    Keep the bacon grease in the pan. Add in the potatoes. Cook for about 15-20 minutes until the potatoes are cooked through and easily pierced with a fork.

    Note-in the 15-20 minutes, use a spatula to mix them every few minutes, but in between stirs cover the pan with a lid. This will let the potatoes cook through the middle quicker.

    Add the onion, pepper, and garlic to the pan when the potatoes are almost finished. Keep the lid off and continue to stir and mix until the potatoes are completely done and the veggies have softened. Add some butter or olive oil if needed.

    Adding the peppers and onions

    Chop the bacon or break it up with your fingers and add it into the hash. Stir to combine.

    Add in salt and pepper to taste, and enjoy!

    How to Serve Bacon Hash

    • While it's an egg free breakfast, you can serve it with an egg on top!
    • Scramble eggs in towards the end of the cooking time.
    • Serve this with hot sauce drizzled on top!
    • Dairy Free Ranch Dressing is a delicious addition to top this off.
    • Garnish the finished meal with parsley or chives.

    Storage and Reheating

    Store any leftovers in an airtight container. Place them in the fridge for up to 3 days!

    To reheat leftovers, you can place a little bit of oil in a frying pan and heating the hash over medium heat.

    Alternatively, and this one is my preferred method, place the hash in an oven safe container, then place a plate on top to prevent it from drying out. Place it in the oven at 350F degrees until the desired temperature is reached.

    Tips and Tricks

    • Be sure to chop the potatoes into even sizes! This will prevent uneven cooking.
    • It helps to soak the potatoes before frying them. This removes starch and helps to make the extra crispy. Be sure to dry them off before frying!

    You don't need much to make this bacon hash, but here are a few items you'll need!

    • Chef's knife
    • Cutting Board
    • Large Skillet
    • Mixing/Wooden Spoon

    I love to use my Lodge Cast Iron for a skillet! It cooks things nice and evenly and holds the heat well.

    Ingredients
      

    • 4 slices bacon
    • 2 small-medium potatoes chopped small
    • ½ onion or 1 small, chopped
    • ½ red bell pepper or 1 small, chopped
    • 4 cloves garlic diced
    • butter or olive oil if needed
    • salt to taste
    • pepper to taste

    Instructions
     

    • Pre-heat a skillet over medium heat.
    • Add the bacon to the pan. Cook on both sides until your desired crispiness is reached. Set aside on a paper towel lined plate.
    • Using the bacon grease in the pan (or adding some oil or butter if needed), add the potatoes. Stir occasionally for 15-20 minutes. When not stirring, put a lid on to ensure the potatoes cook through.
    • When the potatoes are almost done, add the onion, pepper, and garlic and continue to cook until the potatoes are easily pierced with a fork, stirring occasionally and leaving the lid off.
    • Break up the bacon with your hands or chop it into bite sized pieces. Add to the pan and mix.
    • Add salt and pepper to taste, then plate and eat!
