    Ingredients

    The labeled ingredients needed to make gluten free meatloaf.
    • Ground Beef-I use ground beef from my cow share which is a normal to high fat content but you can opt for a lower variety! For more uses for ground beef, try my Gluten Free Hamburger Helper or my Gluten Free Sausage Gravy!
    • Gluten free bread or bread crumbs-I love to use a seasoned variety if I can find one!
    • Milk-I use dairy milk but you can use almond as well.

    Swaps and Variations

    • Dairy Free-use no sugar almond or oat milk to make this both gluten and dairy free!
    • Toppings-Top it off with dried onions or dried shallots for a little crunch on top! Alternately, top with some cheese when you remove the foil!
    • Meat-Do a mix of ground pork and beef.

    How to Make Gluten Free Meatloaf

    All of the ingredients in a mixing bowl ready to be mixed.
    1. Step 1: Preheat the oven to 350F, then place all ingredients into a mixing bowl. Be sure to pour the milk directly over the breadcrumbs, then mix everything together.

    1. Step 2: Place the mixture into an oven safe dish and cover with foil. Bake for 30 minutes, then remove the foil, cover with ketchup, and bake another 15 minutes, or until the internal temperature reaches 165F.

    Storage and Reheating

    Place leftovers in an air tight container, or seal tightly with saran wrap or foil. Keep in the fridge for up to 3-5 days.

    To reheat, place the meatloaf in an oven safe container for a few minutes on 350 degrees Fahrenheit. To prevent it from drying out, place a plate or foil over the top of the container while it's heating.

    You can also reheat it in the air fryer!

    Gluten Free Meatloaf FAQ's

    Why is my gluten free meatloaf dry?

    Dry meatloaf is usually caused by using meat that's too lean, overbaking, or not enough moisture in the mix. Adding milk-soaked breadcrumbs (a panade), eggs, and a bit of Worcestershire sauce helps lock in moisture. Always pull it from the oven as soon as it hits the right internal temp.

    Why does my gluten free meatloaf fall apart?

    This usually comes down to not enough binder or eggs. Make sure you're using the right ratio - typically 1 egg and about ½ cup of breadcrumbs per pound of meat (you can play with the ratio if needed). Overmixing can also be a culprit, as it breaks down the fat and makes the loaf crumbly.

    Why does my gluten free meatloaf crack on top?

    Some cracking is totally normal and doesn't affect the taste at all. It usually happens when the loaf expands during baking. To minimize it, gently smooth the top before baking and avoid packing the mixture too tightly.

    Equipment

    • 1 mixing bowl
    • 1 baking dish

    Ingredients
      

    • 1.5 lbs. ground beef
    • ⅔ cup gluten free bread crumbs or 1.5 cup chopped gluten free bread
    • ⅔ cup milk
    • 2 eggs
    • 2 teaspoon salt
    • 1 teaspoon pepper
    • 1 teaspoon oregano
    • 1 medium onion diced
    • 5 cloves garlic minced
    • 1 Tbsp. ketchup plus more to optionally top meatloaf with

    Instructions
     

    • Preheat the oven to 350F. Lightly spray or coat a bread pan with cooking spray or butter, and set aside.
    • Add all ingredients to the bowl in any order, but pour the milk directly over the breadcrumbs (or bread) to soften them. Mix together by hand.
    • Place the meat mixture into the bread pan and cover with foil. Place in the oven for 45 minutes, or until a thermometer reads 165 degrees Fahrenheit.
    • At the 30 minute mark, spread ketchup over the top of the meatloaf and finish baking uncovered. Serve and enjoy!

    Notes

    • Add some veggies: Add some diced bell pepper, carrots, zucchini, or mushrooms all work well. 
    • Don't overmix: When you mix the ingredients together, stop as soon as it's all mixed. More can fall the meatloaf to fall apart.
    • More flavor: A few easy upgrades: sauté your onions and garlic before adding them; use a splash of Worcestershire sauce or coconut aminos for umami depth; add a spoonful of Dijon mustard, or mix in fresh herbs like parsley or thyme.
