    Ingredients
      

    • 3 tbsp. Avocado or olive oil
    • 2 lb. Raw shrimp
    • 1 20 oz. Canned pineapple chunks in juice, not syrup
    • 3 tbsp. Jerk seasoning
    • 2-4 cups Cooked rice white, brown, jasmine, or cauliflower rice
    • 1 bag Coleslaw

    Instructions
     

    • Heat oil in a skillet over medium-high. Add the shrimp and seasoning and stir to coat, then sauté the shrimp until just pink, about 2 minutes per side. In the last few minutes, add the drained can of pineapple to heat through and flavor the shrimp, mixing thoroughly once the shrimp is fully cooked.
