Who doesn't love a good sheet pan dinner!? They are so easy and convenient! Many of them are also one pan meals, which make cleanup SO. MUCH. EASIER. Click the pin button below to save for later! You'll definitely want to try this Paleo pesto sheet pan dinner later!
Pesto
Pesto from the store contains soybean oil, basil, tree nuts, cheese, garlic, and various spices and additives. Sadly, anyone with a tree nut allergy or dairy intolerance can't eat them! Since I have a tree nut allergy myself, I make my own pesto myself. I also actively avoid soy since it's so problematic, so even if there was a nut free pesto I wouldn't buy any of them with soy on the ingredient list.
This nut free pesto is easy to make and tastes great! I use it for everything that calls for pesto!
Alternatively, why not a more unique pesto? Try this recipe for fennel pesto! It contains no soy, tree nuts, or dairy! It's Whole30 compliant and Paleo friendly.
Budget Friendly
Another thing I love about this recipe is that it's so budget friendly. It's only 5 ingredients, including the salt! Potatoes are extremely budget friendly, and I feel as if I use them all the time in my paleo or Whole30 cooking! They're extremely versatile, and one of my favorite foods.
Even if you buy organic potatoes in a five pound bag, you're still usually getting a decent bang for your buck. However, you can just buy the conventional potatoes and peel them. Sadly, potatoes are high on the dirty dozen list put out yearly. Therefore, I just peel the conventional ones to save money and get rid of as many pesticides as I can!
Equipment
Need some good sheet pans? Look for ones made of stainless steel, not aluminum! Aluminum is toxic to our bodies, and when heated can get into your food more easily.

Lifestyle Friendly Paleo Pesto Sheet Pan Dinner
If you're doing the Whole30, add this to your weeknight dinner meal plan! It's fast and easy, and hits all the Whole30 requirements. Shoprite Markets have storebrand sausage that is Whole30 compliant, but be sure to check the label because you never know when a recipe gets updated! Another good brand is Lamberti's, which is based in New Haven, CT. It's sugar free and Whole30 compatible!
This meal is also paleo friendly. Some paleo followers debate if white potatoes are paleo or not. The final decision is up to you, however most people against white potatoes are following older, sometimes even outdated paleo literature. Many modern Paleo leaders have accepted white potatoes into the paleo world.
I also love that this meal is high in fat. Fat keeps you full longer since it's the last thing to leave the digestive tract. Oils are high in fat, and since pesto is oil based, you're getting in a lot of fat right there! I like to serve it with even extra pesto and soak up all that garlicky goodness!
The pesto also has lots of garlic, great for immunity!
