Paleo and Whole30 gravy is simple and delicious! It's easy to make and quite similar to traditional, gluten and soy filled gravy. You won't notice the difference! Your family won't either, so why not make a healthier version?

Ingredients for Paleo + Whole30 Gravy
- Ghee/Palm Shortening/Butter
- Cassava Flour
- Broth
- Poultry Seasoning
- Pepper
- Garlic Powder
- Salt
And that's it!
It's easy to make this Whole30 compatible gravy, with the ingredients being only a simple swap from traditional gravy. In fact, my inspiration came specifically from this recipe here, made with gluten, and probably also soy and MSG with the inclusion of bouillon. The original recipe is called easy 5-minute gravy, but this one is even easier due to completely skipping the first step and omitting the bouillon!
Cassava flour is both gluten AND grain free, making it acceptable for a paleo and whole30 gravy. It's made from yucca, a starchy root vegetable. Personally I like to buy it in bulk which makes it probably the cheapest, most affordable paleo flour!
Ghee is butter with the milk solids removed. Palm Shortening is a great alternative that acts very similar to butter.
This ghee comes from a great company with high quality. Some of their ghees are Whole30 approved!
For palm shortening, try to make sure it is sustainably sourced. There is some controversy over how palm shortening is harvested and the impact it has on our planet, but if ethically sourced, it's done in a positive, sustainable way. Look for some that are organic and have sustainable certifications.

Recipe Instructions
To start off, melt the ghee in a pan over medium heat.
Mixing rapidly with a fork, add the flour to the ghee.
Next turn the heat up to medium high and slowly add in the broth, trying to fully incorporate it before each addition.
When finished lower the heat and mix in the spices.
Whole30 and Paleo Thickeners for Gravy
People always want to know what's the best thickener for gravy? When it comes to making a paleo and Whole30 gravy however, you can't use typical wheat flour.
Thickeners for Whole30 gravy include tapioca and arrowroot powder for starters. Both are good options for when you already have a finished product, used in the same way you would use cornstarch.
Since in this recipe you're starting off with flour in the base, we're using cassava flour, which is paleo and works very similar to wheat flour!
Alternative Option
If you'd prefer a primal or paleo gravy, you could use butter in place of the ghee. I definitely recommend to use a grass fed and organic butter. If butter is no problem for you, or if you are reintroducing dairy on your Whole30, butter is quite tasty.
Paleo + Whole30 Gravy
Ingredients
- 4 tablespoon ghee, butter, or palm shortening see above which are paleo or whole30
- ¼ cup cassava flour
- 2 cups chicken or turkey stock or broth
- 1 teaspoon poultry seasoning
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- salt to taste
Instructions
- Over medium heat, melt the butter/ghee/palm shortening.
- Slowly add in the flour while rapidly mixing with a fork.
- Turn the heat between medium and medium-high. Very slowly, pour in the broth while stirring rapidly. Try to fully mix each pour of liquid before adding more.
- When broth is fully incorporated, lower to medium and add in the spices, continuing to stir.
- When it is salted to your liking, turn off the heat and enjoy!
