Whole30 Goulash-Paleo + Gluten Free
Whole30 Goulash that's delicious and comforting!
- 2 Tbsp. palm oil
- 1 Tbsp. arrowroot powder
- 1 Cup almond milk
- 1.5 Pounds stew meat or any cut of beef, chopped
- 1 Large onion
- 1 Tbsp. garlic or 4-6 cloves garlic
- 1/4 Cup coconut aminos
- 1 Tbsp. salt
- 2 Cups greens loosely packed
- 1 acorn squash roasted, skin removed, and chopped
In a dutch oven over medium heat, melt the palm oil.
Whisk in the arrowroot.
Very slowly, whisk in the almond milk.
Add in the stew meat, onions, and garlic. Cover and let simmer for 5-10 minutes, or until meat registers at 165 degrees F.
Uncover, and add in the coconut aminos, salt, greens, and acorn squash. Shut off the heat and stir the goulash to let the greens wilt and the squash heat through.
