Whole30 Goulash that's delicious and comforting!

  • 2 Tbsp. palm oil
  • 1 Tbsp. arrowroot powder
  • 1 Cup almond milk
  • 1.5 Pounds stew meat or any cut of beef, chopped
  • 1 Large onion
  • 1 Tbsp. garlic or 4-6 cloves garlic
  • 1/4 Cup coconut aminos
  • 1 Tbsp. salt
  • 2 Cups greens loosely packed
  • 1 acorn squash roasted, skin removed, and chopped


  • In a dutch oven over medium heat, melt the palm oil.
  • Whisk in the arrowroot.
  • Very slowly, whisk in the almond milk.
  • Add in the stew meat, onions, and garlic. Cover and let simmer for 5-10 minutes, or until meat registers at 165 degrees F.
  • Uncover, and add in the coconut aminos, salt, greens, and acorn squash. Shut off the heat and stir the goulash to let the greens wilt and the squash heat through.
  • Serve and enjoy!
