Gluten Free Apple Crisp

Ingredients
  

Filling

  • 6 apples
  • 1/2 Tbsp lemon juice
  • 1/2 cup coconut sugar
  • 1 tsp cinnamon

Crisp Topping

  • 1 cup oats
  • 1/2 cup cassava flour
  • 2/3 cup cold butter
  • 1/2 cup coconut sugar
  • 1/2 tsp cinnamon

Instructions
 

  • Pre-heat the oven to 400F.
  • For the apple filling, peel, core, and chop the apples into thin slices. Mix in a bowl with the coconut sugar and lemon juice. Place into an 8x8 baking dish.
  • For the crumb topping, mix the dry ingredients together. Chop the cold butter into slices, and using a pasty mixer, mix the butter into the dry ingredients. The goal is to have small crumbs. If you don't have a pastry mixer, take two butter knives and using them together, cut across the mixture until all small crumbs form.
  • Spread the crumb topping mixture on top of the apples.
  • Bake in the oven for 1 hour, or until apples have softened. Enjoy!
