Heat the oil in a frying pan over medium heat.
Spread out the egg roll wrappers. Fill them with desired Thanksgiving leftovers.
Wrap and seal the egg roll wrappers using the water according to package directions.
Place the egg rolls in the fry pan, working in batches if they don't all fit. Fry 30-45 seconds per side. Be sure to fry all 4 sides, and the ends too if needed.
Sprinkle lightly with salt on each side every time you turn them.
Remove from the fry pan and serve with the gravy dipping sauce!
