A healthy and easy weeknight dinner!
- 1 package Kielbasa
- 1 large Onion chopped into wedges
- 2 Bell Peppers sliced lengthwise
- 4-6 White Potatoes chopped into small chunks
- Olive Oil
- Salt and Pepper
Pre-heat oven to 400F degrees.
Prepare all the veggies. Make sure the potatoes aren't large chunks or else they will not cook evenly. Alternatively, you can slice them as you would scalloped potatoes.
Lay all veggies on the sheet pan, and drizzle olive oil on top to coat. Season with salt and pepper to taste. Mix evenly.
Slice the kielbasa into 4-6 pieces, and slice again lengthwise. Lay on top of the veggies.
Place in the oven and bake for 35-40 minutes, or until potatoes are tender.
