These hearty ground beef taco bowls are made with seasoned ground beef, caramelized roasted sweet potatoes, and fresh taco-style veggies for an easy, customizable meal that works for busy weeknights or meal prep.
Preheat the oven to 400F and toss the diced sweet potatoes with olive oil, salt, and smoked paprika (or seasonings of choice).
Spread the sweet potatoes on a baking sheet and roast until fork tender and lightly caramelized, flipping halfway through.
While the sweet potatoes roast, brown the ground beef in a skillet over medium heat.
Add taco seasoning, then simmer until the beef is fully coated and flavorful.
Prep the veggies and/or make your sauce while everything cooks.
Assemble the bowls by layering roasted sweet potatoes, taco beef, and fresh veggies.
Finish with cilantro lime dressing (see above) or sauce of choice and serve.
Notes
Beef: The nutritional values here are based on 90% lean ground beef. I like a lot of protein so I always make 2lbs for 4 servings, but you can adjust as you prefer.
