Jerk Shrimp Pineapple Bowls

These Jerk Shrimp Pineapple Bowls are a quick and flavorful dinner that brings the taste of the tropics to your table in under 30 minutes. Juicy shrimp are tossed in smoky jerk seasoning, cooked with sweet pineapple chunks, and paired with rice and veggies for a vibrant, family-friendly meal.

- 3 tbsp. Avocado or olive oil
- 2 lb. Raw shrimp
- 1 20 oz. Canned pineapple chunks in juice, not syrup
- 3 tbsp. Jerk seasoning
- 2-4 cups Cooked rice white, brown, jasmine, or cauliflower rice
- 1 bag Coleslaw
Heat oil in a skillet over medium-high. Add the shrimp and seasoning and stir to coat, then sauté the shrimp until just pink, about 2 minutes per side. In the last few minutes, add the drained can of pineapple to heat through and flavor the shrimp, mixing thoroughly once the shrimp is fully cooked.
Start with your base of rice, then the shrimp and pineapple mixture.
