Ingredients

  • Rice
  • Oil about ¼-1/2 inch in the pan
  • 1-2 lbs. Chicken 1-2 lbs.
  • cup Cassava Flour
  • Salad Greens
  • 1 Onion sliced
  • 1-2 Peppers sliced
  • Shredded Carrots

Instructions

  • Make the rice according to package directions and set aside. Make enough for 4 bowls.
  • Heat the oil in the pan over medium heat. Cut the chicken into strips. Place the egg in one bowl and the flour in another.
  • Heat the oil in a pan over medium heat. Working in batches, take the chicken strips and dredge them in the egg then in the flour. Fry them in the hot oil for about 2-3 minutes per side, depending on how big the strips are. When they're fully cooked, set them aside on a paper towel lined plate.
  • Make the sauce by mixing the mayonnaise, sweet chili sauce, and sriracha. Set aside.
  • When they've cooled a bit, coat them with half of the sauce.
  • Now it's time to make the bowls! Start with rice as your base, then add the greens, chicken, and toppings of choice. Drizzle with more sauce!
