- Oil enough to fill a fry pan ¼-1/3 inch
- 1 lb. Ground Chicken
- 2 Eggs split
- 5 tbsp. Gluten Free All Purpose Flour split
- 2 tsp. Italian Seasoning
- 1 tsp. Salt
- 1 tsp. Garlic Powder
- 2 tbsp. Parmesan Cheese plus more for baking
- 1 cup Mozzarella Cheese
- 24 oz. Jar of Marinara Sauce or similar size
Preheat an oven to 350F.
Heat your oil of choice in a large skillet over medium heat. You'll want roughly ¼-1/2 inch of oil in the pan.
While the oil heats, combine the ground chicken with 1 egg, 1 Tbsp. of flour, and the spices. When it's fully combined, form the mixture into 12 meatballs.
In two separate bowls, place the other egg and scramble it, and in the other bowl place ¼ cup flour and 2 Tbsp. of parmesan Cheese.
Roll the meatballs first in the egg, then in the flour and cheese mixture. Fry the meatballs lightly on all sides so they form a crust, but not enough to fully cook them.
Pour the marinara sauce in a casserole or serving dish. Place the fried meatballs in the sauce and cover with the mozzarella cheese, and a sprinkle of parm cheese. Bake for about 8-10 minutes, or until a thermometer inside registers 165F.
