Ingredients Needed

- Ground Chicken- I love using a lower fat percentage here if possible, I use ground chicken to make my fried chicken tacos and my gluten free fried chicken sandwiches!
- Gluten Free All Purpose Flour-Different brands sometimes use different flour blends. Therefore some of the results may vary but they are generally the same overall. I've tried using King Arthur's or Krusteaz and have great results with both!
- Parmesan Cheese- I've tried this with both real parmesan shreds and grated parmesan cheese. The shreds typically have less filler ingredients and a better taste so I definitely recommend those!
- Mozzarella Cheese-I've tested this with both low fat and full fat shredded mozzarella cheese. The full fat becomes more melty and stretchy so I prefer that, but it did work out well with the low fat as well!
Substitutions and Variations
- These taste delicious with beef instead of chicken (similar to my Whole30 meatballs), to try something different!
- Use Cassava flour instead of Gluten Free All Purpose Flour. It's still gluten free, and is even grain free!
- Feel free to swap the spices and use your favorites!
- I love to use coconut oil or beef tallow for frying, but you can use what you'd like!
How to Make Chicken Parmesan Meatballs

- Step 1: Preheat the oven to 350F, and mix together the meatball ingredients. Form into balls.

- Step 2: Heat the oil in the pan over medium heat. Meanwhile, whisk the egg in one bowl and in a 2nd bowl mix the flour and parmesan cheese together. Dredge the meatballs in the egg then the flour.

- Step 3: Fry them on every side to form a crust, don't worry about cooking them thoroughly here.

- Step 4: Place the marinara sauce into an oven safe dish and place the meatballs inside. Top with the cheeses and bake up to 20 minutes until the internal temp of the meatballs reach 165F.
Chicken Parmesan Meatball FAQ's
Reheating them in the oven as you did to cook them is my personal favorite way, but you can also use a microwave.
You don't need to-they'll be covered in sauce and baked! While they'll be mostly round, the texture is a bit sticky and the frying process can make the shape a bit odd. They taste just as amazing and juicy!

Chicken Parmesan Meatballs
Ingredients
For the Meatballs
- 1 lb. Ground Chicken
- 1 Egg
- 1 tbsp. Gluten Free All Purpose Flour
- 2 tsp. Italian Seasoning
- 1 tsp. Salt
- 1 tsp. Garlic Powder
For Frying
- ¼ cup Coconut Oil enough to fill a fry pan ¼-1/3 inch
- 4 Tbsp. All Purpose Gluten Free Flour
- ½ Cup Parmesan Cheese
For Baking
- 24 oz. Jar of Marinara Sauce or similar size
- ½ cup Shredded Parmesan Cheese
- ½ cup Mozzarella Cheese
Instructions
- Preheat an oven to 350F.
- Heat your oil of choice in a large skillet over medium heat. You'll want roughly ¼-1/2 inch of oil in the pan.
- While the oil heats, combine the ground chicken with 1 egg, 1 Tbsp. of flour, and the spices. When it's fully combined, form the mixture into 12 meatballs.
- In two separate bowls, place the other egg and scramble it, and in the other bowl mix ¼ cup flour and ½ cup of parmesan cheese.
- Roll the meatballs first in the egg, then in the flour and cheese mixture. Fry the meatballs lightly on all sides so they form a crust, but not enough to fully cook them.
- Pour the marinara sauce in a casserole or serving dish. Place the fried meatballs in the sauce and cover with the rest of the mozzarella and parmesan cheese. Bake for about 15-20 minutes, or until a thermometer inside registers 165F. Note that the temperature of the marinara sauce can greatly affect the baking time.
Notes
- Heat the sauce: To speed up the time in the oven, heat the sauce up before hand. You can place it in the oven safe dish and let it heat while you prepare the meatballs, or use the microwave!
- Grated parmesan cheese: If you'd prefer to use grated cheese, you'll want to lessen the amount used or it tastes overwhelming. Use 2 tablespoons in the flour mixture to coat the meatballs, and then just use a sprinkle or two across the top when you bake them.
