Ingredients

  • 2 Tbsp. butter or olive oil
  • 1 lb. ground beef
  • 1 small-medium onion chopped
  • 5 cloves garlic diced
  • 4 cups chicken broth
  • 16 oz. gluten free pasta
  • 1 8 oz. can of tomato sauce
  • 2 tbsp. tomato paste
  • 2 tsp. salt
  • 1-½ tsp. garlic powder
  • 1-½ tsp. onion powder
  • 1 Tbsp. cumin
  • ¼ tsp. chipotle powder
  • 1 tsp. oregano
  • 2 cups shredded taco cheese

Instructions

  • Start by heating the oil in a pan over medium heat. Add the ground beef and cook. If your beef has a high fat content, the oil may be unnecessary!
  • Add in the broth, pasta, tomato sauce, tomato paste, and the remaining spices. Mix thoroughly.
  • Bring to a boil, then lower the heat to just below medium to a simmer and put the lid on. Cook for 10-12 minutes stirring occasionally or until the pasta is finished.
  • Shut the heat and add the cheese. Mix in and serve!
