Garlic Parmesan Smashed Potatoes are crispy, golden potatoes that are seasoned with garlic and parmesan cheese for a deliciously savory side dish. They're the perfect combination of buttery, cheesy, and garlicky goodness!

- fingerling potatoes (any mini potatoes will do)
- butter
- salt
- garlic powder
- parmesan
- parsley dried or finely chopped fresh
- chives finely chopped
Bring a large pot of water to a boil. Preheat the oven to 425.
Add the potatoes to the pot, and boil until just fork tender. Drain the pan.
Lay the potatoes on a baking pan and gently smash them with a potato masher or the back of a measuring cup to flatten them, but keeping them in 1 thick piece.
Spread the potatoes apart and lightly spray with cooking spray. Bake for about 20 minutes or until crispy.
Spread butter over each potato so it melts. Sprinkle with salt, garlic, and parmesan cheese.
Set oven to broil and move rack up to the highest spot. Broil for 2 minutes, or until lightly golden brown and crispy, rotating the pan halfway through.
