For the apple filling, peel, core, and chop the apples into thin slices. Mix in a bowl with the coconut sugar, cinnamon, and lemon juice. Place into an 8x8 baking dish.
For the crumb topping, mix the dry ingredients together. Chop the cold butter into slices, and using a pasty mixer, mix the butter into the dry ingredients. The goal is to have small crumbs. If you don't have a pastry mixer, take two butter knives and using them together, cut across the mixture until all small crumbs form.
Spread the crumb topping mixture on top of the apples.
Bake in the oven for 1 hour, or until apples have softened. Enjoy!
