Ingredients
  

  • fingerling potatoes
  • butter
  • sour cream or french onion dip
  • shredded cheese
  • bacon crumbled
  • chives

Instructions
 

  • Preheat oven to 450.
  • Bring a large pot of water to a boil and add the potatoes. Boil until just fork tender.
  • When finished, gently smash the potatoes with the back of a measuring cup or a potato masher, keeping them in 1 piece.
  • Spread the potatoes on a baking sheet, spray with cooking spray and bake for 20-40 minutes.
  • Top with sour cream, bacon crumbles, cheese, and green onions. Optionally, place them back into the oven for just a few minutes to warm through the toppings. Enjoy!
