Roasted Salsa Verde is a delicious and versatile Mexican sauce made from roasted tomatillos, giving it a smoky flavor. It's perfect for adding zest to tacos, burritos, or grilled meats.
Preheat the broiler. Place the rack at the top of the oven.
Peel, wash, and chop the tomatillos in half. Peel and chop the onion. Slather them both with the olive oil and sprinkle with salt. Place onions and tomatillos on a tray and place in the oven.
Broil for 2-3 minutes, until softened and lightly charred.
When broiled veggies have cooled, place all ingredients in a blender and blend until smooth, then enjoy!
