S'mores Ice Cream Bars (easy, no-bake dessert!)

These gluten-free s’mores ice cream bars are the ultimate summertime treat! They’ve got all the classic campfire flavors—graham crackers, chocolate, and marshmallows—but in a cool, creamy ice cream bar form. Easy to make, fun to serve, and completely irresistible, these bars will be your new go-to dessert for warm weather gatherings.

- 6 gluten-free graham crackers
- ¾-1 pint chocolate ice cream softened
- ¾ cup marshmallows more if you'd like
- ¾ cup chocolate chips to drizzle on top
Line a baking dish with parchment paper and spread a layer of gluten-free graham crackers on the bottom.
Spread softened chocolate ice cream evenly over the graham crackers. Use more or less depending on how thick you'd like the bars. Freeze until firm.
Sprinkle marshmallows over the top.
Melt chocolate and drizzle it over the marshmallows.
Freeze again until the chocolate is set, then slice into bars and enjoy!
