Sweet Potato Shepherd's Pie is a delicious twist on the classic dish, featuring a savory filling of ground meat, vegetables, and herbs, topped with a layer of creamy mashed sweet potatoes. It's the perfect comfort food but leveled up a bit!

Ingredients
Mashed Topping
2lbs.sweet potatoes
¼-1/2cupmilkstart with a ¼ and increase if needed
¼cupbutterincrease if needed.
½tsp.salt
Meat Mixture
4tbsp.butter
1mediumonion
5clovesgarlic
1cupshredded carrots
8oz. mushrooms
1lb.ground beef
¼cupflour
1cupbroth
1-½tsp. salt
½tsp.pepper
¾tsp.smoked paprikacan use regular paprika
1-½tsp.parsley
1-½tsp.oregano
Instructions
Chop the sweet potatoes into equal cubes and boil them in a large saucepan. When they're fork tender, drain the pan.
Add the milk and butter to the pan. Mash the potatoes and mix in the milk and butter. If the mash is too thick and not to your liking, increase the milk and butter and mix. Set aside.
For the meat mixture, heat a large skillet or dutch oven over medium heat and melt the butter.
Add in the onion, garlic, carrots, and mushrooms. Sauté for about 3 minutes or until everything starts to soften.
Add in the ground beef. Break it up as you cook it, approximately 10 minutes.
When the beef is cooked through, stir in the flour completely. Slowly pour in the broth, mixing as you pour. The mixture should thicken. Add the spice and mix, then remove from the heat.
Add the meat mixture to a casserole dish, spread evenly on the bottom. Top with the sweet potato mash.
Bake in a oven pre-heated to 350F degrees for up to 15 minutes, or until everything is evenly heated through. Enjoy!
