    Why You'll Love These Bowls

These bowls are one of those meals that hit the spot every time! Here's why you'll love them:

    • Comfort food made simple: They're warm, filling, and perfect for cozy nights.
    • Gluten-free friendly: We're using gluten-free chicken nuggets or tenders for an easy gluten-free meal. See my suggestion below!
    • Customizable: Adjust portion sizes, toppings, and even add veggies to make it your own.
    • Family-friendly: These bowls are a hit with kids and adults alike!

    Ingredients

Here's what you'll need to make your lower carb, copycat Famous Bowls:

    • Cauliflower
    • Salt
    • Pepper
    • Sour Cream
    • Butter
    • Gluten free chicken nuggets or tenders (see below)
    • Corn (frozen or canned works great!)
    • Gravy of choice (I make this paleo gravy without the poultry seasoning!)
    • Shredded cheddar cheese

Try using Caulipower's chicken nuggets then cutting them into bite sized pieces after they've been cooked!

    Swaps and Variations

    • Make it lighter: Use grilled chicken or baked chicken bites instead of fried nuggets.
    • Add veggies: Sneak in broccoli, peas, or sautéed spinach for extra nutrients.
    • Dairy-free option: Sub dairy-free butter, milk, and cheese to make it dairy-free while keeping that creamy flavor.
    • Homemade gravy: Skip the packet and make your own gluten-free gravy for a fresher flavor with ingredients you're in control of.

How to Make KFC Famous Bowls

    1. Make your mashed cauliflower: Prep a creamy base of mashed cauliflower and season well with salt, pepper, sour cream, and butter.
    2. Cook the chicken: Air fry, bake, or pan fry your chicken nuggets according to the package directions until golden and crispy.
    3. Add the corn: Add the corn into the mashed cauliflower, and mix thoroughly.
    4. Make or heat the gravy: Heat prepared gravy on the stovetop or follow a recipe to make your own!
    5. Assemble the bowls: Layer mashed cauliflower in a bowl, a handful of chicken, some cheese, and a drizzle of gravy.
    6. Serve and enjoy: Dig in while everything is hot!

    Storage and Reheating

These bowls are best enjoyed fresh, but you can store leftovers in separate containers:

    • Fridge: Keep in an airtight container for up to 3 days.
    • Reheat: Warm the mashed cauliflower, chicken, and gravy in the oven. Use an oven safe dish with a plate or oven safe lid on it, then serve.
