Instructions
In a large mixing bowl, mix together the ground chicken, salt and pepper, onion powder, garlic powder, mustard, and arrowroot powder. Form into four patties and set aside.
In a large skillet, heat the cooking oil over medium heat. Enough to fill the pan about ⅓-1/2 an inch.
Scramble an egg in a bowl. Finely crush the tortilla chips and place in a second bowl. Dredge both sides of the patties one at a time in the egg, then fully coat with the tortilla chips.
Place the coated patties in the hot oil and fry approximately 6 minutes per side, or until a thermometer inside reads 165F.
Remove to a paper towel lined plate and serve immediately.
