Gluten Free Shrimp Scampi is a delicious dish made with juicy shrimp, garlic, and butter, served over some gluten free pasta or a tasty and healthy meal.
Boil a pot of water and cook the pasta according to the package instructions. Before draining, reserve ½ cup of the pasta cooking water, then drain the rest and set it aside.
In a large skillet, melt the butter over medium heat. Add the garlic and shrimp and cook for 2 minutes per side, or until they star to get pink. The internal temperature needs to reach 145 degrees Fahrenheit to be done.
Add the chicken broth, lemon juice, and spices. Stir and simmer for 2 more minutes to let the flavors meld.
In the same skillet or a new dish over medium heat, combine the shrimp mixture, pasta, and pasta cooking water. Combine with tongs until everything is fully coated. Enjoy!
