    Gluten Free Shrimp Scampi is a delicious dish made with juicy shrimp, garlic, and butter, served over some gluten free pasta or a tasty and healthy meal.

    • Butter
    • Garlic
    • Shrimp
    • Chicken Broth
    • Lemon Juice
    • Salt
    • Pepper
    • Parsley
    • Oregano
    • Basil

    Substitutions and Variations

    • Use fresh herbs instead of dried.
    • Use jarred garlic to make this meal even faster!
    • Use homemade slow cooker bone broth instead of chicken broth.

    How to Make

    Start by making the pasta. Boil water and place the pasta inside, and follow the package instructions. When finished, reserve ¼ cup of the pasta cooking water, then drain the pasta and put it aside.

    In a large skillet or Dutch oven, melt the butter over medium heat. When it's melted, put the shrimp and garlic inside. Cook the shrimp for 2 minutes each side.

    Pour in the chicken broth and lemon juice, and let it simmer for another 2 minutes. Once the shrimp is pink and has reached an internal temperature of 145 degrees Fahrenheit, it's done!

    Add the spices and stir, allowing the flavors to meld.

    Combine the pasta, pasta cooking water, and shrimp mixture. Toss to thoroughly mix, then enjoy!

    Storage and Reheating

    For any leftovers, store them in an airtight container in the fridge for up to 3 days.

    To reheat the leftovers, place them in an oven safe, covered dish and heat at 350 until the desired temperature is reached.

    You can also use the microwave, but the oven method is preferred!

    Use any kind of gluten free pasta you'd like! Jovial grain free pasta is a clean brand, or you could use veggie noodles such as zoodles.

    Ingredients
      

    • ½ stick butter
    • 12 oz. gluten free linguini
    • 1 lb. shrimp thawed and peeled
    • 5 cloves garlic diced
    • ¼ cup chicken broth
    • ½ lemon juiced/squeezed
    • 1 tsp. salt
    • ½ tsp. pepper
    • 1 tsp. parsley
    • ½ tsp. oregano
    • ½ tsp. basil

    Instructions
     

    • Boil a pot of water and cook the pasta according to the package instructions. Before draining, reserve ½ cup of the pasta cooking water, then drain the rest and set it aside.
    • In a large skillet, melt the butter over medium heat. Add the garlic and shrimp and cook for 2 minutes per side, or until they star to get pink. The internal temperature needs to reach 145 degrees Fahrenheit to be done.
    • Add the chicken broth, lemon juice, and spices. Stir and simmer for 2 more minutes to let the flavors meld.
    • In the same skillet or a new dish over medium heat, combine the shrimp mixture, pasta, and pasta cooking water. Combine with tongs until everything is fully coated. Enjoy!
