Why You’ll Love These S’mores Ice Cream Bars

    • All the flavors of s’mores – without the sticky campfire mess.
    • Gluten-free – made with gluten-free graham crackers, so everyone can enjoy them.
    • Perfect for hot days – cool, creamy, and refreshing.
    • Great for parties – easy to slice into bars and serve.
    • Make-ahead friendly – store them in the freezer until you’re ready to eat.

    Ingredients You’ll Need

    • Gluten-free graham crackers (for the crust and layers)
    • Chocolate ice cream (softened for spreading)
    • Mini marshmallows (to spread on top)
    • Chocolate chips or a chocolate bar (for melting and drizzling)

    Swaps & Variations

    • Dairy-free option: Use dairy-free chocolate ice cream and dairy-free chocolate chips.
    • Mix it up: Try vanilla ice cream swirled with fudge or marshmallow ripple instead of chocolate.
    • Extra indulgent: Add peanut butter or caramel sauce between the layers.
    • Make it campfire-style: Toast the marshmallows with a kitchen torch for a smoky flavor.

How to Make S’mores Ice Cream Bars

    1. Line a baking dish with parchment paper and press a layer of gluten-free graham crackers on the bottom.
    2. Spread softened chocolate ice cream evenly over the graham crackers. Freeze until firm.
    3. Sprinkle marshmallows over the top.
    4. Melt chocolate and drizzle it over the marshmallows.
    5. Freeze again until the chocolate is set, then slice into bars and enjoy!

    Storage & Serving

    • Freezer: Store in an airtight container for up to 1 month.
    • Serving tip: Depending on your ice cream, you may need to let the bars sit at room temperature for 5 minutes before slicing for the cleanest cuts.
