    Ingredients

    Here’s what you’ll need to make this soup:

    • Olive Oil-to sauté your veggies.
    • Trader Joe’s cauliflower gnocchi – the star ingredient that makes this gluten free and deliciously chewy. Check it out here!
    • Sausage – pre-cooked, whichever variety you prefer.
    • Onion, garlic, and celery – the base for a flavorful broth.
    • Broth, heavy cream, and flour – for that creamy, rich texture without the gluten.
    • Cheddar cheese – adds that cheesy depth for a richer flavor.
    • Seasonings – Italian herbs, salt, and pepper.

    Swaps and Variations

    • Use any variety of chicken sausage, or try turkey sausage if you prefer a lighter option.
    • Add some spinach, kale, or Swiss chard, for some greens.
    • Feel free to use your preferred cooking fat of choice instead of the olive oil.
    • Make it heartier with extra veggies like zucchini, mushrooms, or carrots.

    How to Make It

    1. In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until softened.
    2. In the same pot, add the sausage and brown it.
    3. Add the broth and seasonings, then stir in the cauliflower gnocchi (no need to thaw).
    4. Bring it to a light boil until the gnocchi are tender and cooked through, stirring every 2 minutes so the gnocchi doesn't stick together.
    5. In a separate dish, mix the heavy cream and flour. Lower the heat to one notch below medium and while stirring the soup, pour in the mixture, allowing the soup to thicken.
    6. Add the cheese and mix in, and adjust seasoning to taste.
    7. Serve warm and enjoy that cozy, creamy comfort in every bite!

    Storage and Reheating

    • Store: Keep leftovers in an airtight container in the fridge for up to 3 days.
    • Reheat: Warm on the stovetop over low heat. Add a splash of broth or milk if it thickens up too much.
    • Freeze: Best enjoyed fresh, as the cauliflower gnocchi can change texture after freezing.

    Ingredients
      

    • 2 tbsp. Olive Oil
    • 1 bag Trader Joe’s cauliflower gnocchi see above
    • 12-16. oz. Pre-cooked Sausage sliced into bite sized pieces
    • 1 medium Onion chopped
    • 5 cloves Garlic minced
    • 4 cups Broth
    • 1 tsp. Salt
    • 1 tsp. Pepper
    • 1 tsp. Thyme
    • 1 cup Heavy Cream
    • ¼ cup All Purpose Gluten Free Flour
    • 1 cup Cheddar cheese

    Instructions
     

    • In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until softened.
    • In the same pot, add the sausage and brown it.
    • Add the broth and seasonings, then stir in the cauliflower gnocchi (no need to thaw).
    • Bring it to a light boil until the gnocchi are tender and cooked through, stirring every 2 minutes as it heats so the gnocchi doesn't stick together. It'll take a bit to boil, once it boils you only need a few minutes. Once the gnocchi is softened you can go to the next step.
    • In a separate dish, mix the heavy cream and flour. Lower the heat to one notch below medium and while stirring the soup, pour in the mixture, allowing the soup to thicken.
    • Add the cheese and mix in, and adjust seasoning to taste.
    • Serve warm and enjoy that cozy, creamy comfort in every bite!
