    Garlic Parmesan Smashed Potatoes are crispy, golden potatoes that are seasoned with garlic and parmesan cheese for a deliciously savory side dish. They're the perfect combination of buttery, cheesy, and garlicky goodness!

    Why You'll Love these Easy Parmesan Smashed Potatoes

    Who doesn't love cheesy, buttery carbs??? This appetizer or finger food is certainly no exception! They're full of flavor and easy to eat!

    Ingredients Needed

    • Fingerling Potatoes
    • Butter
    • Salt
    • Garlic Powder
    • Parsley
    • Chives
    • Parmesan

    Substitutions and Variations

    • Creamer Potatoes are very similar to fingerling potatoes, so feel free to use them interchangeably!
    • Use ghee instead of butter!
    • Try these Loaded Smashed Potatoes to take them up a notch!

    How to Make Healthy Garlic Parmesan Smashed Potatoes

    Preheat the oven and bring a large pot of water to a boil.

    Add the potatoes to the boiling water and cook just until fork tender, the drain the pan.

    Cooking the potatoes

    Lay the potatoes out on a baking sheet. Gently smash them down either with a potato masher or the back of a measuring cup.

    Smashing the potatoes

    Spread them all out in a single layer on the baking sheet and lightly spray them with cooking spray.

    Bake for about 15-20 minutes, or until crispy. Remove from the oven and top with the butter, salt, garlic powder, parmesan cheese.

    Topping the potatoes

    Set the oven to broil and broil the pan for 2 minutes to let everything melt and get crispy. Sprinkle with the chives and enjoy!

    Tools Needed

    • Large Saucepan or Dutch Oven
    • Fork
    • Sheet Pan
    • Measuring Cup or Potato Masher
    • Knife (optional
    • Cutting Board (optional)

    The knife and cutting board are for if you decide to use the chives or green onions.

    For a sheet pan, I like to use stainless steel pans, as they are safe and non-toxic.

    Storage and Reheating Instructions

    To store any leftovers, seal them in an airtight container

    To reheat them, place them on an oven proof plate or tray and heat them in the oven on 350F degrees until heated through.

    Equipment

    • 1 Large Saucepan
    • 1 fork
    • 1 Baking Tray
    • 1 potato masher or measuring cup

    Ingredients
      

    • fingerling potatoes (any mini potatoes will do)
    • butter
    • salt
    • garlic powder
    • parmesan
    • parsley dried or finely chopped fresh
    • chives finely chopped

    Instructions
     

    • Bring a large pot of water to a boil. Preheat the oven to 425.
    • Add the potatoes to the pot, and boil until just fork tender. Drain the pan.
    • Lay the potatoes on a baking pan and gently smash them with a potato masher or the back of a measuring cup to flatten them, but keeping them in 1 thick piece.
    • Spread the potatoes apart and lightly spray with cooking spray. Bake for about 20 minutes or until crispy.
    • Spread butter over each potato so it melts. Sprinkle with salt, garlic, and parmesan cheese.
    • Set oven to broil and move rack up to the highest spot. Broil for 2 minutes, or until lightly golden brown and crispy, rotating the pan halfway through.
    • Enjoy!
