I love using Siete tortilla chips for this recipe! They're gluten and grain free and also seed oil free!
Substitutions and Variations
- In addition to or in place of the pico de gallo, use chopped banana peppers.
- I love using a blend of Mexican shredded cheese here! You can also use cheddar or colby jack or pepper jack!
- For sauce you can use your choice of BBQ sauce, traditional salsa, or a peach based salsa! If you like spicy, a peach habanero salsa would be so delicious on these!
How to Make
Pre-heat an oven to 350F.
Spread the tortilla chips out on a tray. Top with the pulled pork, onions, pico de gallo, sauce, then cheese.
Bake until everything is warm and the cheese is melted, about 10 minutes.
Top with the fresh cilantro then serve with extra sauce for dipping!
Storage and Reheating
These nachos are definitely served best fresh and warm from the oven! If you have any leftovers, store them in an air tight container in the fridge for up to 3 days.
To reheat, I recommend the oven or air fryer over the microwave! Just be sure to use an oven safe dish!
