    Mediterranean Shrimp Bowls

    These Mediterranean Shrimp Bowls are a vibrant, nourishing meal packed with seasoned shrimp, fresh veggies, and bold, herby flavors. Naturally gluten-free and dairy-free, they’re perfect for a quick weeknight dinner or a make-ahead lunch!

    Mediterranean Shrimp Bowls

    Ingredients Needed

    • Rice
    • Chicken Broth
    • Turmeric
    • Olive Oil
    • Shrimp
    • Salt
    • Garlic Powder
    • Onion Powder
    • Salad Greens
    • Jarred Red Peppers
    • Tomatoes
    • Cucumbers
    • Kalamata Olives
    • Red Onions
    • Tzatziki Sauce

    Variations and Topping Options

    • Use Quinoa in place of the rice.
    • For a paleo and grain free bowl, use cauliflower rice.
    • Use your favorite salad greens or try arugula, swiss chard, kale, or whatever greens you'd like!
    • Other topping options include goat cheese, pumpkin seeds, or jalapenos! If you have any unique toppings, leave a comment below sharing the idea!

    How to Make

    Prepare the dry rice according to package directions, but use chicken broth instead of water. Also add the turmeric along with the rice, and mix it all together. Set it aside when it's finished.

    Meanwhile, heat a large skillet over medium heat and add the oil. Sauté the shrimp in as even a layer as possible. Cook roughly 2 minutes per side, or until pink and no longer translucent, they should be curling up a bit. If you use a thermometer, it should register 145F. Set aside on a paper towel lined plate when they're completely cooked.

    Now it's time to prepare the bowls! Start with your base of turmeric rice and greens, then add the all of the toppings, ending with the tzatziki sauce. Enjoy!

    Top Tip

    This is a high protein meal, so make sure to cook at least 1.5 but preferably 2 lbs. of shrimp!

    Storage and Reheating

    These bowls are fantastic for meal prep! Make them in advance then store them in lunch containers, but keep the dressing separate. When it's time to eat, reheat the bowls in the microwave or oven, then add the dressing and serve.

    Alternatively, you can prepare the veggies, make the sauce, and cook the rice and shrimp and store everything in the fridge separately in advance. Then when it's time to eat, prepare the bowls with everything ready to go!
