    This 5 ingredient recipe for Sheet Pan Sausage and Potatoes combines juicy sausage, tender potatoes, and a vibrant pesto sauce, all roasted to perfection for a simple yet flavorful meal. It's a quick and easy dinner option that requires minimal prep and cleanup.

    Ingredients Needed for Sheet Pan Sausage and Potatoes in the Oven

    • Potatoes
    • Onion
    • Pesto
    • Salt
    • Italian Sausage

    I personally can't tolerate hazelnuts, and unfortunately many store bought pestos contain tree nuts. They also typically contain seed oil, which is highly inflammatory and something I don't want to consume!

    I make my own Nut Free Pesto. It tastes so good and garlicky!

    If you'd like some variety, I also have tried this recipe with Fennel Frond Pesto and it's delicious!

    Substitutions and Variations

    • Add more veggies! Try adding peppers, brussel sprouts, or green beans.
    • Try using White Sweet Potatoes instead of regular white or Russet potatoes.
    • I make this with Italian sausage, but experiment with chicken sausage or different varieties.

    How to make Sheet Pan Sausage and Potatoes

    Pre-heat the oven to 400 degrees Fahrenheit.

    Start by prepping the onions and potatoes. Lay them on a baking sheet and thoroughly mix with the pesto.

    Spread out the veggies as much as possible and place the sausage on top.

    Place the sausages on the pan

    Place in the oven for 25-30 minutes, or until a thermometer in the sausages reaches 165 degrees Fahrenheit. Enjoy!

    Note-If you're wondering which size sheet pan to use, I always use my largest sheet pan, which is 12x17 inches.

    Storage and Reheating

    Store any leftovers in an airtight container. Place it in the fridge for up to 3 days.

    To reheat, heat it in a skillet over medium heat, stirring frequently, until the desired temperature is reached.

    Top Tip

    Be sure to spread the veggies out as much as possible! The more air between them, the more they'll get crispy instead of just soggy.

    If you want to double the veggies, I recommend using a second tray.

    Is it better to bake or pan fry sausage?

    Baking always seems to be better! According to Nourishing Traditions, the method of cooking matters. Slower forms of cooking such as baking are much preferred to frying!

    What temperature should I cook my sheet pan dinner at?

    It all depends on what you're cooking: meat, veggies, etc. For this particular recipe, cook it at 400 degrees Fahrenheit so that the potatoes will cook quickly and the meat will reach the correct temperature.

    How can I customize a sheet pan meal?

    Generally, everything cooks on the pan. This includes a protein, veggie, and carb. You can swap the sausage for chicken, the carb for squash, and the veggie for peppers for example.

    What are the best potatoes to use?

    I typically use Russet or white potatoes. You can also use red potatoes or white sweet potatoes.

    What is the best sausage to use?

    Italian sausage is delicious! However, you can really use just about any sausage you like!

    Ingredients
      

    • 3 large potatoes chopped
    • 1 onion chopped
    • ½ cup pesto
    • ½ teaspoon salt or to taste
    • 1 lb. Italian Sausage

    Instructions
     

    • Preheat the oven to 400F degrees.
    • Chop the potatoes and onion and place on the sheet pan.
    • Mix together with the pesto thoroughly, and spread the veggies apart as much as possible.
    • Place the Italian sausage on the sheet pan.
    • Bake in the oven for 30-40 minutes, or until the sausages reach 165F internally.
