Meatball sub casserole is like a deconstructed meatball sub, baked to perfection for a delicious, easy-to-serve meal. Comfort food meals are my favorite so I am excited to bring you this quick 5 ingredient recipe!

Ingredients Needed
- Marinara Sauce
- Gluten Free Bread
- Gluten Free Meatballs
- Provolone Cheese
- Mozzarella Cheese
Quantities listed below in the recipe card!
I like to make 1.5 of this gluten free meatball recipe as they're perfect to keep this gluten free! I make them small, into about 15 meatballs.
While it's easy to use just regular gluten free white bread and get dinner on the table fast, see below for flavor upgrades!
Swaps and Variations
- Use Garlic Bread to add a whole bunch of flavor!
- Use Sourdough bread!
- You can use any meatballs you'd like, even frozen!
- Swap or add in Parmesan cheese.
- Add in another flavor of cheese or two.
How to Make
In a 2.5 QT casserole dish, spread a thin layer of sauce on the bottom of the dish, about 1-2 tablespoons.
Place 4 slices of bread on the bottom, breaking it up as needed to fill in the gaps.
Cover it with the meatballs, half the sauce, half the cheeses, another layer of sauce, and the rest of the cheese.
Bake in the oven until everything is thoroughly heated through and the cheese is melted, about 30 minutes. Note that if the meatballs are frozen it may take longer!
Storage and Reheating
For any leftovers, they can be stored in the fridge for up to 3 days! Just make sure they are sealed in an air tight container.
To reheat you can use the microwave, but I much prefer to place leftovers on an oven safe dish and heat them up in the oven on 350F!
