    Whole30 Mango Dressing

    Need something different to spruce up your next salad? Try this Whole30 Mango Dressing! It's unique but so delicious and will change up your Whole30 routine.

    I received mangos in my Misfits Market Box (use code COOKWME-WV8XBA at checkout for 25% off your first box!). I love eating mangos as they're so tasty, but I wanted to try something else with them too. This Whole30 Mango Dressing was born! It's super tasty.

    What is Whole30 Mango Dressing?

    This was inspired by the many versions of mango salsa on the internet. As someone who has a food sensitivity to yeast, I knew I needed to create more dressings that are vinegar free, as vinegar has yeast. So the mango dressing was born! It's sweet and salty and savory, all at the same time!

    Pairings

    Wondering what you can do with this mango dressing? Lots of things! If you do put in the optional cumin, it definitely gives it a more Mexican flair. Pair it with Mexican dishes, for a sweet and salty combo!

    You could also mix this with shredded chicken and have a nice, Whole30 salad! Serve it up in jicima tortillas or lettuce wraps to keep it Whole30.

    I also love it on plain chicken, just to dip the chicken in. Speaking of chicken, this is DELICIOUS with chicken tenders or chicken nuggets! A perfect, summer dinner! I've even put this on pizza! And if you don't want it as your main pizza sauce, then have it handy to dip your pizza in because the sweet and salty combination is super yummy! So many possibilities.

    Ingredients
      

    • 1 mango peeled and chopped
    • ¼ cup avocado oil or light olive oil plus more for thinning the consistency
    • ½ teaspoon salt
    • ½ teaspoon cumin optional
    • ¼ cup onion rough chopped
    • ½ cup cilantro packed

    Instructions
     

    • Place the mango in a blender and blend until smooth.
    • Add remaining ingredients except cilantro. Blend until well mixed. Add more oil until you reach desired consistency, usually 1-2 more tablespoons.
    • Add cilantro and blend until incorporated. Enjoy!

    Mango Dressing Tips

    Once you make this, it will last about a week in the fridge. If it does last long enough to get stored in the fridge, the oil will firm it up. Simply leave it out a bit before serving next time! Alternatively, you can just mix in more oil to be able to serve it faster.

    When chopping the veggies before blending, rough chop them just enough so that they won't get stuck above the blender blades. It'll mix faster and come together without frustration! Same with the cilantro. If you skip cutting it, it might wrap around the blade and not get chopped at all.

    Allergen and Lifestyle Friendly

    The greatest part about this dressing is how nutritious it is, and that it works for so many dietary restrictions! It has no added sweetener, so it's Whole30 compliant! It's also paleo, having no soy or dairy added.

    Great for those with allergies or food sensitivities!

    Health Benefits of Mango Dressing

    Cilantro has many health benefits to the human body. According to Medical News Today, it appears to have anti cancer properties after a study was conducted. It also appears to lower pain and also inflammation, something that seems to be highly prevalent in American today.

    The fat content from the oil is also healthy too! Don't be afraid of fat. Your brain is made of fat, so you need it to thrive and survive! Avocado oil and olive oil are both healthy fat sources.

    As for mango itself, food.ntv.com has an article that lists eight health benefits of mangos that is quite impressive! The list is as follows:

      This is fabulous. My first year living in Florida I was given a mango fruit to try. Love them. Now to try this dressing to add a healthy flavor to my next salad.

      This is so clever and sounds so delicious!! I am thinking of course putting it on salads, but I think this has the potential to be good as maybe a tropical chicken marinade!! Thanks so much for sharing!

      I have all of these ingredients, except the mango. But, I have some Georgia peaches, I wonder how that would taste. This recipes looks great for a summer salad. It’s so hot here and salads are the perfect meal.

      This looks super tasty! I have all the ingredients on hand except for the mango (I’ve been looking for more recipes where I can use my avocado oil…it was so expensive, I want to use it more, lol). I will definitely be giving this a try. May make some sort of tropical flavored pasta salad.
